The world of food is constantly changing due to further globalisation, evolving legislation, or the shifting demands of consumers or producers. The past years have shown a trend toward convenience products with a high quality level.

In line with this trend, Vaessen-Schoemaker has developed the new VascoFill range of fillings for use in poultry and meat products.

VascoFill is a range of savoury fillings based on the convenience of a dry powder concept, where the powder contains both the functionality and the flavour. The products are easy-to-use and can create an instant filling through simply combining water and this flavoured and functional powder blend in a mixer. The addition of garniture, such as grated cheese or sliced vegetables, is optional.

This versatile range of fillings is suitable for most meat products and fully adaptable to the customer’s requirements. Textures ranging from oozing to sliceable increase the diversity of the possible applications. The combinations of flavours are practically limitless and increasing daily, due to constant development.

VASCOFILL

These fillings feature specific functional properties to ensure the filling remains in the meat product during several different heat treatments, such as baking, cooking or frying. Beyond the bake stability, the freeze-thaw stability of the filling inside meat products has been optimized to prevent syneresis and degradation of the texture. In addition, the prepared filling is shear stable during further processing. + Meat and poultry products

VASCOFILL
Clean Label 

 

A clean label filling solution for use in fresh and cooked products. During the development of this clean label range, no concessions have been made regarding the flavour or the bake and freeze-thaw stability. By using the latest ingredient technology and extensive know-how, these fillings are developed to be fully stable under temperatures ranging from -36°C up to 100°C.
